The intense far-infrared heat of binchotan swiftly sears the surface, sealing in the natural juices while gently cooking the meat through to its core.
Layered with the subtle aroma and gentle warmth of wood fire, the result is a delicately crisp exterior with a tender, succulent interior.
As the rendered fat meets the charcoal, rising smoke envelops the meat, imparting a deep, lingering richness of flavour and aroma.
Our aim is not to showcase technique, but to reveal the meat’s inherent flavour, aroma, and texture in their most refined expression.
