Fire and the ingredient take centre stage.


At BLACK TERRACE, our cuisine is centred on meat,
grilled over two distinct fires — wood flame and binchōtan charcoal.
The intense radiant heat of binchōtan swiftly seals the surface,
locking in the natural juices while allowing the heat to gently reach the core.
Layered over this is the gentle warmth of the wood fire, and the aroma that rises with it.
The exterior is delicately charred, while the centre remains tender and succulent.
As excess fat and moisture fall onto the charcoal,
they return as smoke, enveloping the meat.
This imparts a subtle smokiness and a depth of flavour
that unfolds with quiet complexity.

Only carefully selected ingredients can truly answer this approach to fire.
At the centre of each dish is the meat —
including USDA Prime Angus beef, alongside a selection of exceptional Japanese cuts,
chosen for the way their flavour is most beautifully revealed over fire.
Vegetables and seafood are treated with the same care, with seasonality and freshness held above all else.
Working closely with markets and trusted producers, we source ingredients at their peak —
each chosen for the vitality it brings in that moment.
Wood fire and charcoal are not a universal flame.They reveal their true character only in the right cuts of meat —
those that can meet the intensity of the heat and be transformed by it.
